What is the difference between an event, a meeting and an appointment?

They look similar on the calendar and are three different things.

An event runs by the day and can span several, each day carrying its own theme and an ordered list of sessions. Conference-shaped: no start time, no join link.

A meeting is a call scheduled ahead of time, with a join link, at a specific time.

An appointment is a booking between a host and somebody requesting their time, and it carries a request that is approved or declined rather than simply appearing in the diary.
